Avocado, Mango Tartare

1 Medium avocado, peeled and diced

1/2 Cup minced heirloom tomatoes

1/2 Cup diced yellow bell peppers

1/2 Cup diced fresh mango

1/4 Cup diced red onion

1/4 tsp. chopped cilantro

Juice of ½ – 1 lime

1/2 tsp. sea salt / to taste

2 tsp. freshly ground black pepper / to taste


Mix all the ingredients together.  Fill cookie cutter (or 2” PVC pipe – see picture) and top with baby greens, or simply serve in a bowl.  Great as a side dish to fish.
